Preheat the waffle maker. Add some olive oil or butter to the baking surface to make sure the waffles won't stick to the iron.
Making the Dough
Mix all dough ingredients until everything is mixed well. For these waffles I used brown sugar, this explains the color. However you can use any sugar you like!
Divide the dough in equal sized balls. You should be able to make around 20 pieces. If you want to make smaller or bigger cookies you can adjust the size of the dough balls!
Bake the waffle by adding the dough ball to the waffle maker. Press shortly to make sure the dough is flattened out. Bake the cookie 1 or 2 minutes, whereafter you need to roll it directly around the end of a wooden spoon. Let the cookie cool down and remove the spoon.
Filling!
Use an electric mixer to whip up the coconut cream and powdered sugar.
Once set, you can add some finely grated lemon zest to the cream. This will give the cream a surprising and refreshing flavor!
When serving..
Make sure to add the cream once your guests would like to eat one. Leaving the cream in the waffles too long will make the waffles sloppy. When filled, finish with some chopped pistachios.
