Add the olive oil to your hot baking pan, and add the onion and garlic.
When the onion and garlic are baked, you can add the curry powder and cabbage. Bake this until the cabbage has turned glassy.
Next up, add the wheat berries and the vegetable stock and let it boil for 45 minutes.
In the meanwhile, chop the walnuts in small pieces and the shiitakes and apricots in slices. Bake the shiitakes in a baking pan until brown and baked.
When the wheat berries are almost cooked through, you can add the apricots, walnuts and shiitakes. Cook the mixture for at least another 5 minutes.
