Equipment

Ingredients

  • 10 Egg Yolks
  • 300 ml Dutch Brandy 'Brandewijn', 'Jenever' or Brandy
  • 200 gram Sugar
  • Vanilla Extract
  • Some Ice Cubes or an ice cold bowl
  • Whipped Cream
  • Dark Chocolate

Instructions

  • Add some water to the cooking pan, and bring this to the boil.
  • Then add the egg yolks, vanilla extract and sugar to the bowl.
  • Once the water is cooking, place the heat resistant bowl on top of the pan. It is very important to make sure the bowl doesn't touch the water and to keep whisking. The idea is to cook the eggs au bain-marie. While keep whisking the egg mixture, add the brandy gradually.
  • Use a thermometer to check on the cooking process. The mixture is ready when the temperature is between 62 and 65 degrees Celsius, or 143 and 149 degrees Fahrenheit. At that point, turn off the heat and take the bowl off the pan. Place the heat resistent bowl on a bowl with ice cubes to stop the cooking process. Whisk the advocaat for another 5 minutes or until cooled down to room temperature.
  • Serve the 'advocaat' with whipped cream and grated dark chocolate.
