Instructions
Cut the scallops, shallot, capers and parsley very fine. Add all the ingredients to a bowl and add salt & pepper. Mix until well combined.
*If you want to serve the tartar later, you can cover the tartar with plastic foil and keep it in the refrigerator.
Divide the tartar mix over the four shells. Use the back of a spoon to create a hole on top of the tartar.
Add the egg yolk on top of the tartar & finish the dish with some cress.
