Grate the carrots and potatoes, and cut the onion in very small pieces.
Mix the vegetables in a bowl with the eggs, flour, nutmeg, cinnamon, salt and pepper.
Bake 3 small pancakes at the time in a hot baking pan. Make sure you use enough olive oil so the pancakes don't stick to the pan.
Top the pancakes with the crumbles goat cheese, walnuts, chili & some honey. Make sure you use a colder pancake on top so the goat cheese doesn't melt off the pancake.
