Three Different ‘Zeeuwse’ Oysters

Tonight is X-mas Eve, so time for a big celebration! I love to celebrate these moments with some good Oysters, so I bought these ‘Zeeuwse Oysters’ . Thank you @tinc.set for this wonderful Catalan sparkling wine! The wine has notes of fresh citrus, ripe apple, peaches and flowers. It is the perfect companion for these oysters!

How to make these three different kinds?

👉 🌴 Passionfruit Oysters 🍹
Mix 1 passionfruit, 1/2 cm freshly grated ginger and 1/6 part of lemon to dress the oyster. Top with some chives!

👉 💕Red Onion & Raspberry 🌺
Mix 2 tbsp of raspberry vinegar with 2 tsp of diced red onion (or shallot)

👉🥂Champagne & Tomato 🍅
Mix 2 tbsp champagne vinegar and 1/2 tsp spicy mustard. Top the oyster with tomato caviar and chives!
