Carrot Pancakes, Goat Cheese & Chili

This dish is actually combining 2 of my favorite dishes: hutspot and goat cheese salad. The first dish, Hutspot is a Dutch dish which is basically mashed potatoes, onion & carrots. The goat cheese salad can be served in different ways but the Dutch version contains, most of the time, goat cheese, chives, walnuts and honey. Since I love some spicy flavors I added a freshly chopped chili pepper. However, you can use other vegetables or another cheese to personalize this dish completely. Maybe nice to try next weekend?

Carrot Pancakes, Goat Cheese & Chili

Cook Time 30 minutes

Equipment

  • Baking pan
  • Grater

Ingredients

  • 250 gram Carrot
  • 250 gram Potatoes
  • 1 Onion
  • 3 Eggs
  • 40 gram Flour
  • Pinch of Cinnamon
  • Pinch of Nutmeg
  • 100 gram Goat Cheese
  • Handful Walnuts
  • 1 Chili pepper
  • Some Chives or spring onion
  • 2 tbsp Honey

Instructions

  • Grate the carrots and potatoes, and cut the onion in very small pieces.
  • Mix the vegetables in a bowl with the eggs, flour, nutmeg, cinnamon, salt and pepper.
  • Bake 3 small pancakes at the time in a hot baking pan. Make sure you use enough olive oil so the pancakes don't stick to the pan.
  • Top the pancakes with the crumbles goat cheese, walnuts, chili & some honey. Make sure you use a colder pancake on top so the goat cheese doesn't melt off the pancake.
